Regarding our Itadaki Zen Tempura
Oil is not only essential for cooking, but also important for us to stay in good health. However, foods containing a lot of oil are hard to digest and can become a burden for our body. Up until now, we have used ingredients like seaweeds that have a beneficial effect on digestion in our dishes, and especially our Itadaki Zen Tempura.
Along with the changes we have made to the structure of our menu, we have prepared a new Tempura menu entirely consisting of different kinds of seaweeds.We have also added a new digestive side dish to be served with the Tempura.
Myaku Syari (Sushi Rice)
This is our original sushi rice recipe.We add organic brown rice flour to compensate for the shortcomings of polished rice.
We add egoma oil (wild sesame) for its intestinal cleansing benefits.

Soy Sauce and Wasabi
As all the sushi at Itadakizen is made without fish, there is no need for wasabi to counteract the flavour. The rice and neta is salty enough already, so you don't need any soy sauce either. Any guests who would like soy sauce or wasabi,please contact a member of staff.
Organic soy sauce is valuable, with a lot of time and effort going into the fermentation process. We ask that you take care not to waste even a drop.
Amongst the range of foods supporting human vitality, our ancestors in East Asia referred to the essence of grains as “Sei” and believed that grains were essential for the formation of a healthy body.
Through empirical understanding, our ancestors knew that the essence of certain sources of food aid certain organs, thus helping to keep the body in an harmonious state (homeostasis).
For example, barley helps the stomach’s functioning by having the property of warming the body, mung beans support the liver’s activities by possessing the characteristic of “tighetening” the body. Linseed and Bulgur wheat help to relax the body whilst also helping the working of the kidneys.
For our Kansei Han, we blend a combination of grains according to our ancestors’ wisdom, adding seaweed which has been proven by modern science to help purify the blood.
Kansei Han will be a valuable friend that will protect your health against the raging waves of the world.
According to East Asian belief, the components which our body is made of are no different from the elements that form the earth (the crystals of the harmony between sea and earth).
Zenkakou is the secret, all-powerful source of flavours that we have learned from our predecessors.
In this dish, we carefully combine the essences of seaweeds, which represent the delicacies of the sea, with the essences of plants, which stand for the delicacies of the earth, and perfect it by means of (the three conditions) “extracting”, “arranging” and “blending”.
